Perform the alternate backup using Utilities / Backup-Restore / Alternate Backup. This will update your safety copy inline with the working copy - Instructions for Performing Alternate Backup
You should also backup using the External backup option to a thumb (pen, flash) drive - With this backup option you will use the add date folder - Instructions for Performing External Backup
Shut down and turn off the computer before leaving at the end of the day to avoid any power problems
